My Creamy Seafood Baked Rice recipe is inspired by Japanese famous Seafood Doria, and HK Style baked rice .
I used to make Seafood Baked Rice during college because it is easy but feels super fancy.
You can use any seafood that you prefer, such a Salmon, Clams, Scallops, Calamari, Mussels, and Shrimp.
Today I am using Shrimp and Scallops to cook the quickest; however, if you are making this for date night or guests, adding clams will quickly turn this dish into a gourmet meal.
My secret weapon for my Creamy Seafood Baked Rice is Dashi powder; it can give any cream sauce an instant flavor boost.
I like to use Dashi powder instead of Dashi stock to help flavor the cream and keep the sauce thicker.
If you can't access Dashi powder, you can also use chicken powder or mushroom powder instead.
Adjust the seasoning again AFTER you add in the seafood, as the seafood would add flavourful and saltiness.
Cut the Creamy Seafood Baked Rice cooking time in half with my secret trick with eggs and rice.
Traditional Doria is served with fried buttery rice, but to speed up the process, by c racking two eggs and adding a dash of chicken powder, simplified "egg fried rice" is done in only 1 minute!
Alternatively, you can make my EASY Egg Fried Rice the night before, and with the leftover rice, turn it into Seafood Baked Rice.

Ingredients
- ½ a diced Onion
- 1.5 cup of Scallops
- 1.5 cup of peeled Shrimps
- 3 tbsp of Butter
- 2.5 tbsp of Flour
- 2 cups of Cream or Milk
- 1 tbsp of Dashi Powder
- 1 tsp of White Pepper
- 3 cups of Cooked Rice
- 2 Eggs
- ½ cup of Cheese
- Turn the heat to medium-high, and in a pan, add 3 tbsp of Butter. Once the butter is melted, add in onion and saute for 2-3 minutes or until translucent.
- Add in 2.5 tbsp of flour and mix until smooth.
- Slowly pour in cream or milk and let it simmer together until it becomes a thicker consistency (around 2-3 minutes)
- Season with dashi powder and white pepper
- Next, add in shrimp and scallops and let it simmer for another 2-3 minutes.
- Add rice, crack two eggs, and a dash of chicken Powder (optional). Mix until every grain of rice is coated in the egg.
- Pour on the seafood sauce and top with cheese.
- Bake at 400F for 10 minutes
